You may have recently noticed a lot of magazine articles about the health benefits of pumpkin. With so many great pumpkin-infused skin care products on the market today, it’s easy to take advantage of the festive gourd’s beauty benefits. But while we absolutely love MyChelle Dermaceuticals’ Creamy Pumpkin Cleanser, Pumpkin Renew Cream and Incredible Pumpkin Peel, we’ve got to admit that eating pumpkin is usually more fun than putting it on our faces… No matter how you slice it, a homemade pumpkin pie is just soooo much tastier than your daily moisturizer 😉
Here are some of our favorite pumpkin recipes this fall, borrowed from popular bloggers and recommended girlfriend to girlfriend:
1. Pumpkin Multigrain Pancakes by The Vegan Road
Start your day off right with these delicious and deceptively healthy pancakes. While they’re loaded with hearty ingredients like oat flour and flaxseed, they’re also packed with pumpkin pie spice and sweetened with maple syrup. The result is just the right amount of sweet… And, as an added bonus, they’re bound to make your kitchen smell wonderful on a crisp fall morning! This recipe is also entirely vegan, and it even includes a gluten-free option so everyone can enjoy.
2. Spiced Pumpkin Soup by Le Petit Ogre
While this particular recipe calls for an average-sized Hokkaido pumpkin, we’re pretty sure nearly any variety would do… And, in a pinch, you could even substitute canned purée. What makes this version of creamy, comforting pumpkin soup really special is the variety of spices – There’s cinnamon, ginger, coriander, and curry powder. Also, instead of heavy cream, the soup gets its richness from potatoes. Try substituting sweet potatoes to up the antioxidant factor!
3. Pumpkin Risotto by Fine Dining Lovers
Creamy, filling and packed with the season’s best produce, risotto might just be the perfect fall food. And while the lengthy cooking time can intimidate many at-home chefs, please don’t let it deter you – The results can be truly magnificent, and well worth the wait! This particular risotto highlights fresh pumpkin, and is garnished with sage and cheese. You could serve it as the first course of your Thanksgiving feast, or let it stand alone as a lovely vegetarian entree. As the photo here shows, a hallowed-out pumpkin makes the perfect bowl for this savory autumnal dish.
4. Pumpkin Apple Bread by Heather Homemade
This wonderfully spiced bread combines two of our favorite things about fall: pumpkin and apples! As your home fills with the scent of cinnamon and cloves, it may be hard to wait for the final product to finish baking… As soon as it does, you’ll definitely want to enjoy a slice for breakfast or dessert – or any time, really. For a healthier version, leave off the crunchy cinnamon/sugar topping, swap out half of the all-purpose flour for whole wheat, and use apple sauce instead of vegetable oil.
5. Simple Roasted Pumpkin by Steamy Kitchen
Sometimes, simple really is best – especially when it comes to cooking, and especially when you have fresh, seasonal ingredients at-hand. In this so-easy-it’s-almost-not-a-recipe recipe, a seeded pumpkin (of any variety, really) is sliced, spread out on a baking sheet, and drizzled with olive oil and a fragrant combination of spices, salt and brown sugar to be roasted. The end result can be savored alone, or added to an autumnal salad of arugula, pomegranate seeds and goat cheese.
6. Pumpkin Cheesecake with Gingersnap Crust by Chef Mommy
As much as we try to stay healthy, we’ve got to admit that it’s just not the holiday season without a little indulgence (Right?) We love a good homemade pumpkin cheesecake for two reasons: 1.) Cheesecake is amazing. (Obviously.) And 2.) The crust is so much easier to make than a pie’s! Use a food processor to crush and blend Oreo’s or (in this case) gingersnaps, press the mixture onto the bottom of a springform pan, et voila – You’re ready to add your pumpkin filling, bake to perfection, and top with fresh whipped cream, spiced pecans and/or a drizzle of caramel!
